The multi-core gains speak for themselves–the Ultra is the best of the M1 series. The Mac Studio M1 Ultra can sometimes double the performance of the M1 Max version, depending on your use case. As someone who edits a ton of video in DaVinci Resolve and Final Cut Pro, if handbrake is not performing better on the M1 chip than a 2018 Intel chip with integrated graphics, that sounds like an issue with handbrake not taking advantage of the new chipset.
